Kauai Sea Salt
This is a single large crystal of Kauai sea salt grown on a
microscope slide. The red clay (Alaea) that gives the
salt its red color also interfers with the regular growth of the sodium chloride
crystal. The result is the large population of
steps and cavities in the crystal that significantly increase the surface area and
volume of the crystal. These properties
affect the sensation in the mouth.
